PUMPKIN POPPERS

Quick and easy pumpkin poppers are perfect for that midday, fall treat.

"It's fall, y'all!" is the cheerful exclamation Texans proclaim when September 1st arrives. Despite the heat outside, we retreat indoors, where our imagination conjures up the quintessential autumn ambiance. Today was no exception.

Gazing out of my kitchen window, the sky presented a blanket of overcast clouds. (Wishing for rain!) The wind was in motion, carrying leaves in its dance. The scent of my beloved autumn candle filled the room, enhancing the ambiance. We had set the mood with a fall-themed coffeeshop jazz video on YouTube. (Highly recommend trying this!)

In the brief moments between changing school subjects and teaching kids, I managed to whip up a batch of pumpkin poppers. They're akin to donuts, yet they're a tad healthier!

Notes:

*Add 1/2 c chocolate chips for extra yumminess.

*The original recipes called for 1/3 c canola oil but since we no longer consume seed oils, I swapped out the canola oil for applesauce. If you don't have applesauce on hand, you can use 1/3 c avocado oil.

*I substituted gluten-free flour for regular.
